Since 2004

Owner Alejandro José Diaz came from Mexico and opened Tricolor in 2004. Twenty years later the ovens still go on at 2 a.m., and every fall the bakery makes pan de muerto by hand: the dough bones on top stand for the departed, the sesame seeds for tears.
